  • Clean Produce before Use 

Prep the Steaks 

Season the steaks with salt, pepper, and Montreal steak seasoning after patting them dry with a paper towel. 

Heat one or two teaspoons of oil in a large skillet over medium-high heat until heated but not smoking. Put steaks in. 

Finest sirloins: 

Turn frequently for 6–8 minutes until well-browned or medium-rare. 

For medium-rare beef tenderloin and New York strips, cook for 2-3 minutes per side, flipping once, until well browned. Cook filet mignons for medium-rare, flipping frequently, for 8-12 minutes or until browned, Rest steaks on a dish for 5 minutes. Prepare the salad while the steaks simmer and relax. 

Make Chopped Salad Green Goddess 

  • Remove the cabbage core and roughly slice. 
  • Dice carrots coarsely. 
  • Finely chop radishes. 

Roughly Chop Cilantro, Saving Half for Garnish

Mix the cabbage, carrots, radishes, half the cilantro, and half the green goddess dressing in a large bowl. Add salt, pepper, and remaining dressing to taste. 

Serve 

Serve the steaks and chopped green goddess salad separately. Sprinkle pumpkin seeds on salad. Serve any extra dressing individually and top with the remaining cilantro. 

Pulled-Pork Taquitos with Tomatillo Salsa Verde and Queso Fresco:

Prepare Taco Filling

The Mexican simmer sauce foundation should simmer softly in a large, dry skillet over medium-high heat for two to three minutes. Add the protein, season with a touch of salt and pepper, and cook for two to four minutes, tossing occasionally to break it up and mix it with the sauce. Let the filling cool in a large basin—empty pan. Make cabbage slaw while filling cooks and cools. 

  • Prepare Cabbage Slaw 
  • Thinly slice cabbage without the core. 

To Serve, Reserve Half the Salsa Verde 

A medium bowl should contain cabbage, one or two tablespoons of oil, and half of the salsa verde—season with salt and pepper. While making the rest of the food, stir occasionally. 

  • Heat tortillas and Combine Tacos 
  • Remove 6 (12) tortillas and save the rest. 

Reserve Half the Queso Fresco for Garnish

Rewarm the tortillas, flipping once, for 30 seconds per side, on the skillet directly over a flame or in the dry pan used for the filling over medium heat until just pliable and warmed through. 

On a work surface, place tortillas. Spread the taquito filling evenly over the bottom part of each tortilla. Roll each tortilla tightly with half the queso fresco. 

Prepare Tacos 

Heat one or two tablespoons of oil in the same skillet as the filling over medium-high heat until heated but not smoking. Work in batches if needed. Place Taquitos seam-side down. To crisp the tortillas and heat the contents, cook for 2–4 minutes, flipping once. Transfer to a paper-towel-lined plate. Add oil between batches if needed. 

Try Fresh Mozzarella and Mushroom Mini Rosemary-Potato Pizzas: 

Sunbasket offers fresh mozzarella and mushroom-topped Mini Rosemary-Potato Pizzas! Enjoy these tasty treats with simple instructions and new ingredients for a nice meal. 

  • 1 Sauté mushrooms and onion. 
  • Preheat the oven to 400°F. 
  • Peel and thinly slice enough onions to measure ½ cup. 
  • Thinly slice mushrooms. 

Mince, squeeze, and grate. Finely chop enough garlic for one teaspoon. 

Heat two to three teaspoons of oil in a large skillet over medium-high heat until heated but not smoking. Sprinkle salt and pepper over the onion and boil for three to four minutes, stirring regularly, until caramelized. Add the mushrooms and simmer for 2–3 minutes, stirring occasionally, until tender and gently browned. Heat garlic for 30 seconds until aromatic. Transfer to a plate—empty pan. While onion and mushrooms simmer, prepare potatoes and rosemary. 

Prepare and boil potatoes. 

After cleaning, finely slice the potatoes crosswise. Remove the rosemary leaves off the stems and roughly chop them to make one teaspoon—reserve rosemary for further use. 

Add potatoes and rosemary to a medium bowl and season with salt and pepper. You cook the onion and mushrooms in the skillet, heating one or two teaspoons of oil over medium-high heat until heated but not smoking. Work in batches as necessary. Heat the potatoes in a single layer for 3–4 minutes, rotating once, until they soften. Transfer to a plate. Add oil between batches if needed. While the potatoes cook, toast the flatbreads and make the mozzarella. 

Bake Pizzas, Toast Flatbreads 

Cut mozzarella into ½ inch pieces. Place flatbreads on a sheet pan and lightly oil the tops. Bake for 1–2 minutes until lightly toasted. Take it from the oven. 

Put the potatoes in an even layer on the flatbreads, pour the mushroom mixture on top, then sprinkle mozzarella and chilli flakes to taste. Bake for 8–10 minutes until flatbreads are crisp, potatoes are lightly browned, and mozzarella is melted. Just before flatbreads, prepare arugula. 

Prepare Arugula and Bake Pizzas 

Add salt and pepper to taste to a medium dish of arugula and one or two tsp of oil. If desired, put arugula on the pizzas and cut into wedges on a cutting board.
